Multi-colored Roasted Potatoes

Preheat oven to 450 degrees
3 LBS colored potatoes
3 TBSP olive oil
Salt and pepper
Wash potatoes and place in a 9 x 13 pan
Cut slits in top of each potato
Drizzle with oil and sprinkle with salt and pepper
Cover with aluminum foil and bake for 40 minutes or until soft and cooked throughout
