Quinoa Pilaf





Quinoa is a delicately flavored grain, native to South America. It can be found in most health food stores. For even more flavorful pilaf, use vegetable stock in place of the water.






Ingredients:
1 med onion diced
1 pepper diced
Vegetable oil for frying
2 cups quinoa
Salt pepper and garlic powder to taste
4 cups water/or vegetable stock if you have it on hand


In a medium size pot, sauté onions and peppers in vegetable oil until soft.  Add quinoa and spices and mix. Add water to mixture. Bring to a boil and then lower flame.  Cover and let simmer for 15 minutes. Stir before serving. Serve warm or cold.
